I would like to explore the art of fresh pasta making. To me, food is an integral part of one’s heritage. I have always been passionate about Italian food because it connects me to my Italian heritage. The only problem is, I have food allergies that require me to maintain a gluten-free, vegan diet. This prevents me from eating traditional Italian foods. However, I have found that cooking Italian food for others is as much a part of my heritage as eating it.
Since becoming more in touch with my culinary heritage, I have compiled all of my grandmother’s recipes from marinara to calzone to taralli. Using her recipes as a guide, I have cooked my way through a multitude of traditional Italian dishes, observing and adjusting as I go. My favorite part of cooking is sharing the fruits of my labor with my friends.
Crafting fresh pasta and shaping it into various types would be the ultimate way for me to share my heritage with others. Throughout the process of perfecting a dough recipe and the technique to shape pasta, I would blog about my experiences, include facts about pasta making, and discuss how Italian cuisine is intertwined within Italian culture. My blog would allow students to connect with the process as it unfolds and to also learn about Italian cuisine and culture. I think this would expose part of the audience to another culture and make others familiar with their own Italian heritage.
